Food Fun Friday- Tuna Walnut Salad with coconut

Let me first say that an avocado trumps any dish and gives it an A.  This is a nice recipe- not too tuna-ee.  Plenty of crunch and a nice flavor.  (my comments are in italics)
Coconut Tuna Walnut Salad
1 can tuna
1/2 C roasted walnuts (pecans)
1/2 C coconut flakes (non-sweet coconut)
1/2 tsp fresh peppermint finely chopped
1/2 apple, peeled and diced small
Salt to taste
1/2C plain yogurt (1 scoop)
1/2 C raisins (no raisins thank you)
1/2C mayonnaise (1 scoop)
Mix all ingredients.  Serve immediately or chill.  Serve over Spring mix, romaine or in 1/2 Avocado.

What's happening to me?

1. I am a little bit frazzled... really just a little.
2.  I love my blog friends and all the help they give me... TUNA FISH SANDWICHES-  ok I'm going to try a new tuna recipe tomorrow!
3.  I haven't read any blogs in 4 days, this is a fact that I hate and one that I just can't do anything about so I'm just going to deal with it.
4.  two words:  Downtown Abbey   Thanks for recommending it, and you know who you are actually MANY of you have recommended it... and using the sarcastic font:  Thank You
5.  I don't know how mom's who work full time blog. 
6.  I highly value sleep, at least 9 hours!
7.  I can't open jars the way I used to...this is a new discovery which I also hate.
8.  My daughter told me that I sounded just like my mother... the things I complain about that she(my mother) does.. I AM DOING.. wow that one hit below the belt.

Maybe I am more than a little frazzled! 
I think I'm going back to sleep now!
No, I will persevere and go to work.
then come home and pack more boxes.

you can tune a piano, but you can't tun a fish

In this daunting task of packing up and moving ...WHAT do you do with all that tuna fish that you have been buying on sale and saving for that 'rainy day' (for an emergency!!!)
WHAT great recipes do you have for tuna fish, because, frankly, I can't stand that fishy taste!!!

quick tuna story.  When she was a little girl, Kieri used to sneak in and feed her cat a can of tuna fish.  (she says) I used to say... "What are we going to do when there is an earthquake and we can't get to the store to buy food and you have given all our tuna to the cat!!!"
(I still don't recall saying that -wink wink)

Food Fun Friday- Kale Krisps

This is probably the most interesting recipe I've made yet.   I do believe it is an acquired taste!
It is also sooooooo EaSy
Wash and tear (I cut the hard stem off) about 4 leaves (as shown above on a cookie sheet),making sure they are bite size pieces, (more about that later). Drizzle with Olive Oil.
Sprinkle with salt (I used garlic salt).
Cook in oven 400 degrees for about 15 minutes untill crispy and slightly brown.
They are now the consistency of very thin potato chips!  They will crunch in your mouth (and also in your hand and all over the counter!!)    They taste pretty good!
Mr Produce ate most of them, he LOVED THEM.... I liked them.  But they really need to be eaten with something else or you do get that 'green veggie' taste in your mouth (like farts.. you know what I mean).

All in all, it is a GREAT way to eat your greens and tastes pretty yummy, WAY better than raw Kale!

What will they think of next?

I came across this little gadget. and wow look at all the (weird) things it can do...I mean it is not just a pedometer
Well it IS a pedometer, but it also will tell you the calories burned! AND it tells you the intensity of your walking-running-workout (or if you have been taking the stairs) And get this it will tell you about the quality of your sleep. YES YOUR SLEEP... guess you have to wear it when you sleep (a sleep wristband). 

They also have a web site that you can download your information to track steps
and such.  Wow that's a lot of personal information that this little flip thingie can tell about you.  You can also log your food!
Can't tell if this little thing would be a motivator or just annoy me!!

All I know is I want one!!  Just one little thing stands in the way, it is a hundred bucks! (found at best buy)

I read about it on  be different act normal here one of the crafty project blogs I go to.  I'm trying to win one, because that's the ONLY way I'm going to get one of these babies!!

update on family.. and a head question

First of all, I wanted to give (show) you an update of Grandma Kathrine:
91 1/2 and getting stronger
We visited her, along with family and had such a nice time.  To see a smile on her face and the fact that she has gained weight, is eating all her food AND they even get her to play BINGO!
pretty amazing after all she's been through!

So my question of the day is: 
how do YOU control a headache!!!
are drugs best? one type?  caffeine? what's the cocktail of choice?
I'm not talking migraine here (that's a horse of a different color)

Food Fun Friday - Rolo Cake Mix Bars

We've have cut out sugar since the first of the year.  Now that it's Valentines day..I wanted to make my friends some goodies.. and I found my stash that I bought for Christmas that I never made.  ROLO's~!!!    so I found a recipe for

Rolo Cake Mix Bars (http://www.cookiesandcups.com/)
1 box yellow, vanilla or white cake mix
1, 5oz can evaporated milk
1/4 C melted butter
40 Rolo candies, unwrapped and cut in half

Oven=35degrees 
spray a 9x13 pan with cooking spray.
With a mixer, beat cake mix, evaporated milk and butter until combined.  Mixture will be thick and sticky. 
Divide batter in half and press one half into the bottom of the pan and bake until just set, about 8-9 minutes. 
Remove it from the oven and place the halved Rolo candies (caramel side down ) on top.
Drop remaining batter on top of Rolos in teaspoon sized amounts.  Bake for 20-24 minutes longer until the top begins to golden.  Cool completely before cutting it into squares.
mmmmm just look at that melted goodness
oh but it's not for ME!!! It's for others to enjoy!

Valentine Dresses

I saw a picture  here
and thought... hey I can make that...
I took a long sleeve t-shirt (only wore once and just didn't like it) and some lace I had (ok it is a LOT of lace) and gathered 2 1/2 inch strips of each and sewed them (zig zag) to a white t-shirt:
and a headband to match.  They didn't turn out like I thought they would, and it was a little messy...but hey we can all use a little messyness right? 
Fun stuff to make before the sewing machine is packed up.

Food Fun Friday- THE easiest crockpot chicken

You all know I love my crockpot!
NOW I have THE easiest recipe ever!!!
believe me it is the cheesy-ist chicken around, VERY flavorful!.

1 can of Stokes Red Chile Sauce

  
1 can of Ricos Queso Blanco
I used 4 chicken breasts, but 6 would have fit in the crockpot just as well. 
Since I work all day, I can't just put the chicken breasts in the crockpot for 6 hours and turn it off.. so I put the chicken breasts in the crockpot frozen.  By the time I get home from work it is done.  All I have to do is take two forks and shred the chicken.
THIS WAS DELICIOUS. 
I HAD MUY LEFTOVERS FOR LUNCH WRAPS TOO!!
