Pinterest Highlights and Bombs

You've seen the 'hard 'boiled' eggs that were cooked in the oven.. yeah me too so I thought I'd try it out.
Oven set at 325degrees...  place eggs on racks... cook for 30 minutes
Immediately transfer the eggs to a bowl of icewater.   Leave about 15minutes.
Peel. (usually under running water helps it peel better.)
So you'll see that some parts of the eggshell are darker, and there a little 'spots' on the egg white... from where it sat on the oven rack.
This is a highlight...these eggs are delicious!  Very creamy.  Cooked but not green or overdone!  They were really good and I will cook my eggs like this this from now on!

Back to Washington state...
You know the saying, the more things change the more things stay the same. Well I'm livin' it.
After getting Mr. Produce situated in warm/sunny/hot/fun/family friendly Arizona,  I arrived back here in WA to rain/drizzle/below 55degree temps.
Yep, still the same back here.  Thank you summer.
To cheer me up I really have to work at it.
Today I count my blessings in the way of friends.
A really good blog friend from up here in the Seattle area - Shelly - paid me a visit and BROUGHT GIFTS!!!!! She stopped by my work- this JOY flag was the gift topper and a PERFECT item to keep on my desk
(by the way, my boss is always using the quote: Consider it all Joy)
mmm a beautiful 'Shell' crown, I LOVE CROWNS
and a cute little light, shells included- a little sand and it will be a beautiful to the outdoor table-- whenever i DO get to AZ.

It totally made my day, and the joy on my desk is a reminder everyday of this wonderful friend.  Please stop by her place... she is going through some rough family times and needs all your thoughts and prayers!

Food Fun Friday- Crockpot Stroganoff


Crock-Pot Beef Stroganoff
Ingredients:
1 lb stewing beef
1 (10.75 oz) can Cream of Mushroom soup, I use the heart healthy
1 (8 oz) container of mushrooms, sliced
½ a medium sweet onion, chopped
1/3 cup water
1 T Worcestershire sauce
½ block cream cheese (4 oz)
Procedure:
In your crock-pot, combine beef, soup, mushrooms, onion, water, and Worcestershire sauce. Cook on high for 5 hours or low for 8 hours.

Before serving, mix in cream cheese and cover for a few minutes until mixture warms through and cheese melts.

Enjoy over rice or pasta. OR serve over (frozen) stir fried veggies!

We're moving to sunny (read hotter than what you would consider hot) Arizona .
My cousin once described Arizona : "It’s as though you are standing behind a running bus, no matter WHERE you stand!!!"
Rod has never lived in any other state but Washington .

Food Fun Friday- Oven Fried Chicken

Still trying to stay true to a South Beach/Atkins diet.. (you can use less or different flour)
yummy buttery goodness
Oven-Fried Chicken Recipe
Preheat oven to 425 degrees
Ingredients:
6 chicken breasts
1/4 cup all-purpose flour
1 teaspoon thyme
2 teaspoons paprika
1 teaspoon salt
1 teaspoon butter, melted


Step by Step:
1. Mix together flour, thyme, paprika, and salt in a medium bowl.
2. Spray baking dish with butter flavored non-stick cooking spray. Pour melted butter into baking dish.
3. Dredge chicken in flour mixture and place into baking dish. Bake for 35 minutes, flip and cook an additional 30 minutes or until chicken is fully cooked.

Never say Woot

There are several phrases and words used in this new lingo world that drive me crazy:

Right On - yes, this is the phrase from the 60's that people use now as an answer to anything.
Awesome - speaking of a word or phrase that is used to answer/describe anything-- people not EVERYTHING is awesome.  In fact VERY few things are awesome (awe inspiring)  Come on, think of a new word.
No Doubt - no not the band, but the phrase, again used to answer anything, awwwe yes, no doubt.

and then excited people use these irritating words:
Awesome (oh there it is again)
Sweet or Sweeeeeet (all I can think of is that stupid movie, and the guy that used to work behind me who used this word  
all.day.long  Thanks Robert)
and then one of the worst words of all
Woot  oh yes and apparently it is spelled:
wOOt
well,I hate the word so much,  wootwootwootwootwootwootwootwootwootwoot
*like nails on a chalkboard*

Food Fun Friday- Fresh Strawberry Rhubarb Pie

Mr. Produce wanted a Rhubarb pie for his Birthday.  I'm not a fan of pie's BUT it was HIS Birthday so here you go.  I used frozen deep dish pie crusts and for the top I used pie crusts from a box (no judging).

After making this I realize that the strawberries are the REAL rock stars of this recipe.  I don't know why they call it Rhubarb.  I guess it's the little bit of sour taste they add.  But really it is sweet and strawberrylike!

Fresh Strawberry Rhubarb Pie (from Betty Crocker)
Crust for 9inch 2 crust pie
1 1/3 C sugar
1/3 C flour
1/2 tsp grated orange peel (optional but REALLY makes this taste GREAT)
2 C cut up rhubarb (half inch pieces)
2 C cut up strawberries
2 tbl butter

Heat oven to 425degrees.  Prepare pastry.
In one bowl mix sugar, flour and orange peel. 
In another bowl mix berries and rhubarb.
Place half of the fruit into the pastry lined pie plate: sprinkle with half of the sugar mixture.
Repeat.  Dot with butter. 
Cover the pie with the remaining circle of pie crust.
Cut some slits for steam.  Cover the edges with 2-3 inch strips of foil to prevent excessive browning. 
Remove the foil during the last 15 min.
Bake until crust is brown and juice bubbles through slits (40 to 50 minutes)
