Friday Food Fun-Roasted Chickpeas & a quick lunch
I had my little snake already…. And my friend Carmen gave me another recipe for a GREAT SNACK ( I actually eat it for lunch)
It's full of protein, and flavor… .. yum-yum-0 (too much Rachael Ray?)
Cut up: apples, chicken breast, walnuts, dried cranberries.
Mix them all together with lowfat yogurt. Great as a lunch (with romaine leaves) or as a snack! THANK YOU CARMEN! ! ! ! ! ! ! ! ! ! !
There are many variations on this snack. I just did the easy-sneezy one
Preheat oven to 450.
1can chickpeas (15/5oz) rinsed and drained
2 tbl olive oil
salt & pepper to taste
any other seasonings (I used garlic, and I have used lemon pepper)
Mix ingredients together in a shallow baking pan. Bake for about 20 minutes until golden brown, stirring occasionally.
A great snack warm! Like popcorn, (only sort of.. well that’s what they say, but not really)

Friday Food Fun-Chili Lime Chicken Kabobs
so.... Its back to no carb meals for this couple! Although I will say Mr. Produce looks forward to Friday to see what Food Fun he gets to test!!!
3 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
1 lime, juiced
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
cayenne pepper to taste
salt and freshly ground black pepper to taste
1 pound skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces

DIRECTIONS
In a small bowl, whisk together the olive oil, vinegar, and lime juice.
Preheat the grill for medium-high heat. Thread chicken onto skewers, and discard marinade.
Lightly oil the grill grate. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.

Paula Deen's White Chocolate Cherry Chunkies
Cook Time: 13 min
Ingredients
1 stick(s) (8 Tbsp. unsalted) butter, softened
1 cup(s) (packed) brown sugar
1 cup(s) (granulated) sugar
2 large eggs
1 teaspoon(s) vanilla extract
3 cup(s) flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
2 tablespoon(s) milk
1 cup(s) (chopped) macadamia nuts
1/2 cup(s) (candied ) cherries, roughly chopped
1 1/2 cup(s) white chocolate chunks or chips
Directions
1. Preheat oven to 375ºF. Grease a large cookie sheet and set aside.
2. In a medium bowl, with electric mixer, cream butter and sugars together until light and fluffy. Add eggs and vanilla, and beat until just combined. Set aside.
3. Sift together flour, baking soda and salt in separate bowl. With mixer on low speed, add milk to the butter mixture, then add the flour mixture. Beat until just combined (batter should be stiff).
4. In another bowl, combine nuts, cherries and white chocolate chunks. Stir into batter with wooden spoon just until blended. Drop cookie dough by heaping tablespoons onto prepared cookie sheet, 2 inches apart. Bake 11 to 13 minutes, or until golden, then transfer cookies to wire rack to cool.

blog-erville
I cannot stay off of the internet-blogging-network.
I think about it all day long. I can’t wait till I go home, Yesterday was TORTURE. I had to work, right after work at 4:30 I had to take my mother grocery shopping. I left her at safeway and went to the post office, drove back to Safeway, called 2 friends (not in), read the rest of a magazine, went in to find her.. and she wasn’t quite done. So after an hour and a half I finally got her home and groceries packed in… I had to run to the VT appointment, and then to another VT appointment… and then home, make dinner, lunch, clean kitchen, FINALLY.. at 9pm I logged onto that big box of information-overload time-waster upstairs and started my stroll thru Blog-ville.
I read all my fav’s, I looked at their fav’s and their fav’s being careful to keep the good ones… finally I had too many blogs minimized and my computer CRASHED
Sigh, now I’ll have to start all over again. And it ended up to be 10:45…. (for those of you who know me know I can not, no matter what stay up after 10pm)

..and frankly who has time to add buttons when I’m going from blog to blog finding more and more people I want to know and have hang out with and over to dinner.
Actually this doesn’t sound like Blog-itis. it sounds like Blog-a-holic.

…and I’m not about to recover because it’s just too much fun and I am learning so much, I don’t have any time to make what I’ve learned though or cook or take pictures or read the recommended books or listen to the recommended music (or I should say research how to “get” the recommended music) HEY I’m still learning how to upload pics to my blos.. let alone put pics on the side panel or links on the side panel (yeah, guess you could say that is really stressing me out).
I need Lauren to visit and just do it for me, that would solve all the problems.

Friday Food Fun- Quiche Cups to Go
Quiche Cups to Go
1 pkg Canadian Bacon
1 pkg (10oz) frozen chopped spinach
¾ C liquid egg substitute
¾ C shredded reduced-fat cheese
¼ C diced green(red-whatever) bell pepper
¼ C diced onion
3 drops hot-pepper sauce (optional)
Thaw spinach, drain excess liquid.
Spray muffin pan with cooking spray.
Put 1 Canadian Bacon in each tin
Combine egg, cheese, peppers onion & spinach in a bowl. Mix well, Divide evenly among the muffin cups. Bake at 350° for 20 minutes, until a knife inserted in the center comes out clean.
Quiche cups can be frozen and reheated in the microwave. ANY combination of appropriate vegetables and cheese can be used.
