Food Fun Friday- Pumpkin goodies

Being from Half Moon Bay..... October is Pumpkin Season!!!

I have so many yummy recipes... (especially Mary's pumpkin roll-ups)
well.. I thought I'd try a new one, a really simple one...
Pumpkin Spice Bars

(luckily I hid this piece because they are ALL GONE... and I just made the bars LAST NIGHT.. Mr. Produce thought they were yummy)

1 box of spiced cake Mix
1 15oz can of Pumpkin (NOT pumpkin pie mix)
1 Cup chocolate chips

Mix with a mixer, beat together the cake mix and pumpkin. Add the chocolate chips and mix by hand.
350 degrees for 20 minutes.

(*I mixed the whole thing by hand. *I only put 1/2 cup of chocolate chips. *I put it in a 8X10 pan..it might fit in a 9X13, might not. *I cooked it longer.. like 30 minutes and it still turned out like pudding. I left it out overnight and it was fine in the morning ...well what was left of it!!!!)

and then..... I saw these plump little babies on Emily's blog here and MAN-O-MAN those pumpkin cupcakes look good!
But I settled for her cookie recipe... and here you go:
pumpkin choc chip cookies
1 c brown sugar
1 c pumpkin
1/2 c oil
1 tsp vanilla
2 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1 c choc chips
*bake at 350 on a greased cookie sheet, 12-15 min
