It has been hot here and I was looking for a HEALTHY and quick and cool thing to fix for dinner. This literally FELL out of my book. It was just a little square, 2x2inch paper and YUM YUM it filled the bill.
Tuna Salad with grapes and pistachios
packet of tuna
2tsp low fat Italian dressing
1/4 cup pistachios
3/4 cup grapes, halved
spoon over bed of mixed greens.
(now you can be REAL creative with this recipe, and add tomatoes, or avocados or ANY kind of fruit (raisins-apples) and ANY kind of nuts (almonds,-walnuts) and I liked it better with balsamic dressing.
hmmm, Think I'll go make me a container for lunch today!
