Food Fun Friday- Pecan Crusted Chicken

yummy is all I'm gonna say!  ( oh yeah, thanks Danelle for this yummy recipe!) Moist and just the right amount of flavor/spice.


Pecan Crusted Chicken from Simply Classic  serves 6

6 boneless, skinless chicken breast half's

in food processor or 'Magic Bullet" chop the following:
1/2 C Mayonnaise
2Tbsp Dijon mustard
2Tbsp lemon juice (or more if needed for the bullet)
2 medium shallots, chopped
1/2tsp black pepper
1/4 tsp Tabasco sauce


Coat each chicken breast in the above mixture then coat with a mixture of:
3/4 C pecans, finely chopped
3/4 C bread crumbs
Place chicken on a greased cookie sheet and refrigerate for 2 hours or overnight


cook at 350 for 45-50 minutes.. until the crust is lightly browned and chicken is firm.


Serve hot from the oven, or chill before serving for improved flavor.

Pecans are one of my top favorite foods and so anything that they enhance (LOL) is good to me!

Ooooo, I'm not a fan of eating whole pecans, but the flavor is delicious. Since they're all ground up as a coating here, this is a must do! Thank you!
