A couple of weeks ago I made the Cafe Rio Salad. Well the pork was ok (sorry guess I don't really like pork) but the dressing is GREAT.. Mr. Produce went gaga for it.
Today's Food Fun is all about 'the sauce'

#1. Cafe Rio Salad dressing #1
1 pkg. Hidden Valley Ranch dressing Mix
8 oz. can Salsa Verde
2 cloves garlic
¾ cup Mayo
¾ cup sour cream
¼ tsp Tabasco Sauce
¼- ½ cup fresh cilantro
Mix in blender. Add lime juice to taste. Mix ahead of time and chill
it for several hours. It can be thinned with buttermilk if needed.
1 pkg. Hidden Valley Ranch dressing Mix
8 oz. can Salsa Verde

#2. Cafe Rio Salad dressing
1 pkg Hidden Valley Ranch dressing mix
1C mayonnaise
1C buttermilk
2 tomatillos, remove husk, diced
1/2 bunch of fresh cilantro
1 clove garlic
juice of 1 lime
1 jalapeno
Mix all ingredients together in the blender.
#3. Fry Sauce
1/4 C mayonnaise
1/4 C ketchup
1 tsp. pickle juice
1 tsp hot sauce
salt & pepper (the spice not the duo)
Mix all ingredients together.

Cilantro Mayonnaise
Ingredients
3/4 cup reduced-fat mayonnaise
3/4 cup loosely packed cilantro leaf
1 tablespoon fresh lime juice
1 teaspoon light soy sauce
1 garlic clove

Directions
1Put all ingredients in a blender.
2Blend until smooth.
3Store in the refrigerator.

Alrighty girl...this sounds WONDERFUL!
